Kimberley McMahon

Kimberley McMahon is a licensed dietitian in Nevada with degrees from Montana State University and Utah State University. She has taught various nutrition courses in traditional and online formats at several universities, including Utah State and Northern Kentucky University. Currently, she teaches in the Department of Nutrition at Rosalind Franklin University. McMahon is a co-author of multiple nutrition books, including Discovering Nutrition, and has experience in wellness, weight management, sports nutrition, and eating disorders.

Dr. Melissa Bernstein is Associate Professor and Chair of the Department of Nutrition at Rosalind Franklin University and Chicago Medical School. Recognized among the top 10 registered dietitians in the U.S. by Today’s Dietitian magazine, she is an international speaker and educator advocating for nutrition in medicine. Dr. Bernstein has co-authored six nutrition textbooks and contributes to various academic publications. She serves on the board of the American College of Lifestyle Medicine, chairs the Education Committee, and co-chairs a Nutrition Strategy task force. She's involved in several advisory and review boards, including the Nutrition Care Manual and the Academy of Nutrition and Dietetics. Her interests focus on food and lifestyle as medicine for chronic disease.

Dr. Paul M. Insel has been trained as an M.D. and with board certification in Internal Medicine, he received research training at the UCSF and NIH before joining the faculty at UCSF and subsequently UCSD, where he is currently Distinguished Professor of Pharmacology and Medicine and Vice-Chair. He is also the Director of the UCSD Medical Scientist (M.D./Ph.D.) Training Program. Dr. Insel holds a Doctorate from the University of Paris and is a Fellow of the American Association for the Advancement of Science, and has received many other awards and honors. Paul has also served as Associate/Editor of numerous scientific journals and is currently Editor of the Annual Review of Pharmacology and Toxicology and co-Head of Faculty of the Faculty of 1000Prime in Pharmacology and Drug Discovery.

Dr. Insel has been the principal investigator of numerous NIH studies involving mental health, health education, cardiovascular disease, blood pressure, and nutrition. He has authored over 14 books and more than 100 articles.
